Such a shame you don't completely trust in your vet, I have my views based on what the vet has said, I don't know enough to go against a vet.
I suppose in their line of work they are seeing animals of all ages being PTS and to see one at 5 that appears healthy they may be thinking that it's safer and less traumatic for her to live out however long she has now. It's unlikely they would have said that for an ulterior motive surely, afterall they would make more money from you by encouraging a spay. I wouldn't hesitate to get a rabbit spayed but, if I were in your shoes and adopted a 5 year old and the vets weren't keen, I must be honest I would probably go with that advice.
As I said earlier it is a bit of a gamble either way, she may be one of the lucky ones who never develops cancer, on the other hand she might, she might pass away under anathestic though due to her age, it might be too much for her heart - only you can decide as her owner but, it is important I think to find a vet that you feel you trust, it will really help you make up your mind on this one.
