If you're worried about chewing of cardboard or carpet, sea grass mats and houses are a relatively cheap way of adding enrichment, Amazon do them, and chill and chew mats too.

Good luck with the new vet, hope you get an answer this time. If they prescribe metacam, I believe its palatable to most bunnies, I used to put it on my buns food, and she always ate it up.
