I've had foam mats as flooring for a few years and it's been fine - Lola had a tiny nibble on one when she first arrived but that was all. From the mess she made though, she didn't eat any, just spat it out everywhere lol.
I remember somebody saying that their bunnies absolutely destroyed it (oops!) but I think it depends how destructive they are in general.
