Dental issues - how do I tell....

My new foster had to have his teeth trimmed down as apparently they were very overgrown - I have some reservations that the vet wasn't a bunny vet for a start - as it is thought he wasn't being fed hay (no sign of any food at all when he was picked up). I have no experience of dental issues but I've had a quick look at his teeth and they seem to be quite 'overshot'. He seems to be eating fine and now has unlimited hay and very very small amount of pellets.

What should I be looking out for? Could this right itself as he is still very young and now getting a proper diet?
