I want to cuddle her too and I could because she will sit still when caught but I really think it's more out of fear than enjoyment so I wouldn't do that to her. I just want her to be happy!!

It's not a nice thought, but they are prey animals and it's not really surprising most don't like being picked up. I guess some bunnies just don't lose the instinct that all four paws off the ground is seriously not good news.
