bags for dried stuff

Here's a bit of a dumb question or 2 - I am going to dry lots of lovely wild stuff for over the winter but I just wondered:

- do you dry it actually in the brown paper bags, or leave it out to dry then store in the bags?

- is it better to have lots of little bags of stuff or fewer big bags? (or doesn't it matter?

I dry mine hanging in the airing cupboard & then pop into brown paper bags for storage.

Question of where to keep these bags is another story!
My shed is not insulated - and gets very damp.
Loft seems really hot & stuffy at the moment - and will be cold in the winter...
May be too warm inside the house.
