Growth Spurt?

I'm not sure what's going on, but I thought I'd ask the experts ;)

Oz, I think, could be going through a growth spurt. He's about 6 months old, and he's been neutered about a month ago, maybe a little more. For the christmas season we brought him in the car about an hour and a half to my GF's parents house. It's been about a week and a half. I was gone for a few days to my parents house, but he stayed here, and he was very comfy, he didn't stop eating or drinking or binkying. But when I came back yesterday I noticed something.

Firstly, he's going through his first(that I've observed) moult. But when I went to feed him last night, he was STARVING. He gets fed a small handfull of pellets in the morning with some carrot/lettuce. Then at night he gets parsley, cilantro, and something else if we have it. And he's always got PLENTY of hay and water. And I noticed he went through half his water bottle in about 3 hours, and when I fed him his veggies last night, it was like he couldnt eat fast enough.

He's very well fed, and this morning ALL his hay was gone. He's never eaten this much this fast or drank this much this fast before. And his poops have gotten slightly bigger, instead of being small hard round pellets, they varry between small and hard and round and bigger and "squishable" but not soft.

Any ideas?
