what colour/pattern is my bunny?

Can anyone help me? What colour is my rabbit?
The first pic is of Cookie today - he is 21 wks tomorrow.the second pic is of him when I got him at 8 wks.He was a cookie colour when we got him which is obviously where his name came from.I need to know what colour to put on his insurance but he really isn't any specific colour or pattern and he changes daily! I know that rabbits can change colour but this seems a bit much - my vet even asked if he was the same rabbit that she jabbed!

He looks like a lighter version of a "sooty fawn" although it's hard to tell, but he is lovely
